“Trappist” designates beer brewed at a Cistercian monastery, with proceeds funding the abbey and charity. Only 14 worldwide. Chimay is the flagship from Scourmont Abbey (founded 1850) in Belgium.
Chimay Blue (Grande Réserve) was originally made for Christmas 1948. ABV 9.0%, with dried fruit, caramel, chocolate, and faint spice. Bottle conditioning lets it evolve over time.
Excellent with aged cheese (Trappist, Comté, Parmigiano), roast beef, game meat, and dark chocolate. Substantial enough to stand alone — also a fine after-dinner beer.
Serve at cellar temperature (12-14°C) for full aroma. Use the Chimay tulip glass. Don't rush — savor it like wine over 30+ minutes. Bottles age well for years; enthusiasts collect vintages.
