Founded in 1997 in Fujikawaguchiko, Yamanashi. Uses Mt. Fuji underground spring water — exceptionally soft, ideal for delicate brewing. The European-style replication is highly regarded.
Lineup includes pilsner, weizen, rauch, and schwarz. The soft spring water characterizes them all with clean, free-of-off-flavors palates. Standard pilsner is ABV 5.0%.
Excellent with hoto noodle stew, Yoshida udon, raw horse meat (basashi), Fujinomiya yakisoba. The clean profile pairs across Japanese, Western, and Chinese.
Serve at 5-7°C. Use the appropriate glass for each style. Best enjoyed locally during Mt. Fuji sightseeing. The brewery also operates a taproom.
